Meal Plan February 21-26, 2012

First posted meal plan of the new year.  Well well well…

I am really on a vegetarian/vegan kick lately, and I’m finding many great blogs to inspire me.  So there are some links in this post.

Tuesday:
Lunch:  Pancakes – it is shorve tuesday after all, here’s  a link to my favorite recipes posted last year.  We had the cinnamon oat ones, from the freezer.
Dinner:  Pasta with Nona’s tomato sauce

Wednesday:
Lunch:  tuna or grilled cheese sandwiches
Dinner:  Ezogelin Corbasi – Turkish red lentil soup.  got to love a soup with a story, and well I am turkish! (thanks CookEatLiveVegetarian), with some crusty bread made in my trusty breadmaker.

Thursday
Lunch:  wraps with avocado and crudites, roasted veggies and collard greens as the wrap, well not for the kids, they can just have normal wraps.
Dinner: Martinique Sweet Potato Curry with Eggplant and Pineapple.  I dont think I need to say anymore here.   This recipe is from my new favorite blog, and it’s from a doctor in Toronto. how cool is that.  I have made a few things from here and they are amazing!  thanks Janet and TasteSpace.

Friday:
Lunch: pita pizza
Dinner:  Mango Black Bean and Quinoa Salad to go with something, not sure what yet, maybe this…empanadas with collard green and tofu.  From Sweet potato soul.

Saturday:
Lunch:  I need to do a really really long run (29-32k), and probably will only have jelly beans on the road till I get back.  But I did read somewhere that I should have my meal prepared before I go out so that I will eat the right upon my return.  Hmm will need to think about this.
Dinner:  out with friends

Sunday:
Lunch:  clean out the fridge day!
Dinner: roast chicken and veggies (carrots, ruttabaga, beets and potaotoes)


Meal Plan December 5-11, 2011

Second week of December and it’s still pouring rain instead of snow, not making it look like Christmas yet.  Well at least I decided what I will be making for the cookie exchange.  Can’t say until the big reveal, but dare I say stay tuned.  This week all the recipes are basically from the lastest issue of Every Day Food from Martha, keeping it simple.

Monday
Lunch:  pizza for the phase two of birthday celebrations
Dinner:  Tofu and eggplant stew from Young Thailand’s cookbook – Simply Thai, jasmine rice

Tuesday
Lunch: Montreal Smoked Meat sandwiches on rye bread
Dinner:  chicken and lentil burger from EDF Dec’11 pg 68

Wednesday
Lunch:  grilled cheese sandwiches
Dinner:  halibut with warm bean hash from EDF Dec’11 pg 76

Thursday
Lunch:  sweet potato and black bean quesadillas
Dinner:  vegetable bean soup from EDF Dec’11 pg 80

Friday
Lunch:  out for lunch while celebrating a PD day, yipppeeee!!!
Dinner:   slow cooker chicken mole (requires me to find a store that carries ancho chiles or a good subsitute, would ancho chili powder do???) from EDF Dec’11 pg 43

Saturday
Lunch:  out for lunch during class (this is one of my favorite parts of taking an all day class)
Dinner:  out for dinner club

Sunday
Lunch:  leftovers
Dinner:  Sweet and Sour glazed chicken wings from EDF Dec’11 pg 57


Meal Plan November 28-December 4, 2011

And with this week we welcome in December.  My son’s birthday is the 4th, at which point there is exactly three weeks to Christmas.  Global warming has made this late fall feel like Christmas is months away.  Nice for trial running, but not for getting into the holiday spirit.  This week will change all that with the start of  holiday party season, starting with an office party, children’s party  and the aforementioned birthday party.   I also need to decide on what cookies I am going to make for my annual cookie exchange.

Monday
Lunch:  pancakes
Dinner:  Butternut squash, kale and black bean stew served with rice

Tuesday
Lunch: roast beef sandwiches
Dinner:  fish sticks and roast root vegetables, including cranberry or all red potatoes, even the flesh is red, very cool

Wednesday
Lunch:  grilled cheese sandwiches
Dinner:  turkey tacos

Thursday
Lunch:  pasta with cheese
Dinner:  lentil and turkey burgers

Friday
Lunch:  minestrone soup
Dinner: stove top mac and cheese prepared by the children!!!

Saturday
Lunch:  sushi from the grocery store (I”m in class!!!)
Dinner:  out for office holiday party

Sunday
Lunch:  sweet potato quesadillas
Dinner:  pizza party for  a wee birthday boy!


Meal Plan November 21-27, 2011

I put this meal plan together instead of going out for a run this afternoon, bad for the marathon training plan, but good for the meal plan.  I am feeling uninspired again, it may be this between Thanksgiving and Christmas season.  Many of my magazines are either focused on Thanksgiving, which we celebrated back in October, so not really interested in those recipes, or are gearing up for the holiday season and entertaining, where are the quick weekday meals?  With some effort I did find a few that I am interested in trying out.  It seems that many of the recipes are too new for their websites, bummer, no links!

Lunch:  Pancakes

Meal Plan October 17-23, 2011

The excuse I am using for not preparing my meal plan until now is that the mouse for my mac was out of batteries for the past two days.  Good one eh?

Tuesday

Wednesday
Lunch:  more quesadillas
Dinner: Chicken with Cilantro Peanut Sauce (Canadian Living, Sep 2011)

Thursday
Lunch:  Veggies and Hummus
Dinner:  Mediterranean Vegetable Bean Soup (Food and Drink Autumn 2011)

Friday
Lunch:  Egg wraps
Dinner:  Seared Cod with oven roasted fall vegetables (butternut squash, beets, broccoli etc)

Saturday
Lunch:  sandwiches at the Science Center
Dinner:  Garlic Ginger Chicken Wings (Canadian Living, Sep 2011)

Sunday
Lunch:  Green tomato and Leek Fritata (From Martha)
Dinner:  Basque Roast Chicken (Canadian Living, Sep 2011)
