Meal Plan August 1- 8, 2011

This week starts off with a BBQ pool party since it’s the last long weekend of summer, hard to believe that the summer is half over, and the week ends with a camping trip.   The next time we see a long weekend, will signal the most beautiful time of the year – back to school.

Monday:
out for a BBQ

Tuesday
meatless monday moved over a day, so we had Moroccan Carrot Salad and Caprese Pasta Salad

Wednesday
Dinner:  BBQ salmon with a peach and red pepper chutney on top, steamed broccoli and bok choy, and wild and brown rice

Thursday
Dinner:  swiss chard and roasted beet salad, corn and turkey burgers

Friday
Dinner:  going camping, so dinner on the fire pit (hmm hotdogs anyone?)

Saturday and Sunday Camp Menu
Breakfast:  pancakes, eggs and turkey bacon
Lunch: Crudites and Hummus and Pasta Salad
Dinner:  Roast Potatoes, Burgers and crudites

 


Meal Plan July 25-31, 2011

Here we are halfway through the week and the meal plan is finally getting up.  It’s been a week of not cooking much, lots of raw food and salads.  Just feeling a bit hot to cook.

Mediterranean Pasta Salad

Monday
Dinner: Quinoa Salad from the Canadian Living Blog (I used the Middle Eastern dressing) and Broccoli Slaw from Chatelaine I liked this recipe alot, it may be a nice use for the stems of broccoli that no one eats at my place, if only I was that organized!

Tuesday
Dinner:  Potato Salad and leftover quinoa salad.  This potato salad was really good, I halved the dressing and still thought it was a bit too much, I weighed the potatoes before peeling and they were close to the amount called for in the recipes, next time I would do at least 2.5lbs of potatoes for half the amount of dressing)

Meal Plan July 18-24, 2011

Ahh nothing like coming back home to a mountain of laundry, that’s the punishment for going on vacation.  But it was all worth it.

This week’s meal plans begins with the best pantry bean salad ever made, I loved this dish!

Meal Plan June 27-July 3, 2011

I was away for one night last week, and that’s all it took to go crazy at the magazine counter at Shopper’s. I have a serious love of magazines, and I picked up the latest copy of the FoodNetwork’s magazine. I really like it, I know it can all be found on line, but the way it’s presented is so much fun to browse.  So I have picked most of the meals this week from the July/Aug issue!

This is also the last week of school, Canada Day and my husband’s birthday, so we have much to celebrate!  Also, I am done with school time lunches, I can’t take anymore of them, we are having picnics in the park everyday this week except for the last day of school pizza/pool party!

Dinner:  Walnut, Kale, Sweet Potato Turkey Burgers (Chatelaine July’11)  (I didn’t get to this recipe last week, and I really want to try it)

Dinner:  Grilled Pierogies

Meal Plan May 9-15

We are back to the routine of combing through all my food magazines and cook books to test out new recipes.  I am going to try out many of Mark Bittman’s recipes this week, since I have his latest book, and I just discovered that there’s an app for his How to Cook Everything Vegetarian which I think I must invest in.

Monday
Lunch:  leftovers
Dinner:  meatless monday:  Spinach Greek Salad, boreks (my mom’s feta filled goodies)

Tuesday
Lunch:  raw beet salad with ginger  ,pasta with butter and cheese
Dinner:  braised butternut squash, spicy salmon (I just love this recipe)
