After a two week break, I am back. I had prepared a paper meal plan for the past two weeks and just didn’t bother to transfer it to here. There were some highlights that are worth repeating. The spanish meatballs in the slow cooker from Everyday Food’s from the May issue was good, mildly spicy that even the kids enjoyed it. The Beef and Beans casserole from Canadian Living May issue was excellent. The kids did not like it, but it was great! I noticed that it was heavy in calories, but it was also very hardy, I think the biscuit topping is the culprit there.
We are quickly approaching the one year anniversary of the blog, so I thought I would highlight some of my favorite recipes that I have come across in the past year. I think I will do the same next week as well, since the official anniversary is May 6th. So stay tuned for an awesome Cinco De Mayo menu!
