This week starts off with a BBQ pool party since it’s the last long weekend of summer, hard to believe that the summer is half over, and the week ends with a camping trip. The next time we see a long weekend, will signal the most beautiful time of the year – back to school.

meatless monday moved over a day, so we had Moroccan Carrot Salad and Caprese Pasta Salad
Wednesday
Dinner: BBQ salmon with a peach and red pepper chutney on top, steamed broccoli and bok choy, and wild and brown rice
Thursday
Dinner: swiss chard and roasted beet salad, corn and turkey burgers
Friday
Dinner: going camping, so dinner on the fire pit (hmm hotdogs anyone?)

Breakfast: pancakes, eggs and turkey bacon
Lunch: Crudites and Hummus and Pasta Salad
Dinner: Roast Potatoes, Burgers and crudites
