The focus for this week’s menu are two things, school day lunches and getting through a couple recipes I need to test for Chatelaine Magazine. So it’s a busy week. I hope the lunches go well, the pressure is on!!!
Monday:
Lunch and Dinner: at the CNE. Now some may be horrified at the thought but it turned out ok, I had butter chicken and rice with a veggie samosa for dinner and a Tiny Tom donut for dessert. Yes that was all that was left for me, one tiny donut!
Tuesday:
Lunch. Sweet potato Quesadillas (yes this has become a weekly staple, I even had if for breakfast today, while making it to pack for lunch)
Dinner: brown rice shrimp bowl
Wednesday
Lunch. Perogies with garlic spinach
Dinner: chicken pot pie
Thursday:
Lunch Pasta with veggies and sauce
Dinner. Tofu Thursday (recipe yet to be decided)
Friday
Lunch grilled cheese with broccoli
Dinner: homemade pizza if warm enough – grilled
Saturday
Lunch: gels and gummies (last long run for this marathon)
Dinner: baked manicotti
Sunday
Lunch: tour de greenbelt lunch
Dinner: sausages, kale soup
